Bring the Balkan summer into your kitchen with our organic Ajvar, Lutenica, and Malidzano. Handmade by farmer Suzana and her team. Sun-ripened peppers, eggplants and tomatoes from open fields are roasted over fire, peeled by hand, and slow-simmered for hours over the fire.

The people & the process
Together with farmer Suzana, we started our organic Ajvar journey in 2023 and continue to grow with it every year.
We keep improving the field work, testing other traditional vegetable varieties, and refining the processing for more taste and better consistency. As our products are purely natural, each batch may taste slightly different \u2014 just like wine. Flavor depends also on the weather, soil, and harvest. Ajvar
Organic · From roasted Peppers
Our Ajvar is made from traditional pepper varieties such as Kurtovska Kapija. After harvesting and washing, the peppers are roasted over an open fire and peeled by hand.
Because our peppers grow organically in open fields, their shape can be wrinkled make this work delicate and time-consuming \u2014 but it is exactly this care that gives our Ajvar its special character.
The roasted peppers are then slowly cooked over the fire into a thick, rich paste \u2014 100% handmade, with a taste you can truly feel.

Lutenica
Organic · From roasted Peppers & Tomatoes
Our Lutenica is a blend of peppers and tomatoes. Sweeter and with fewer roasted notes than Ajvar.
"Luta" means spicy — but we also have a mild version for you. The tomatoes add a natural sweetness that balances the roasted pepper flavor beautifully.
Like our Ajvar, the Lutenica is made entirely by hand by Suzana and her colleagues, following the same traditional methods as Ajvar passed down through generations.

Malidzano
Organic · From roasted eggplants and peppers
Our Malidzano is made from roasted eggplants and peppers. You can instantly taste the roasted eggplant, giving it a fresh, slightly tangy flavor with less sweetness.
The eggplants are roasted over the fire until soft and tender, then combined with roasted peppers for a rich, complex flavor that is truly Macedonian.
Like all our pepper products, Malidzano is handmade with care, following traditional methods passed down through generations.
